Catered two brunches this past week-end.One was for a pre-wedding event and the other a post-wedding affair. Both featured our "Made-to-order" Omelette Station accompanied with Irish Smoked Salmon, Belgian Waffles, Grilled Baby Sausages. Hickory Smoked Bacon and of the Home-style cooked Potatoes. Of course, we had our mini Muffins and scones as well as an array of mini Bagels and croissants.

We just catered a hugely successful BBQ Birthday Party in Tarrytown. Weather was absolutely perfect for the poolside event. Started at 1:00 under picture perfect blue skies.. Served appetizers ( Mini -Sliders, Crab Cakes, Shots of Gazpacho,etc ) for a couple of hours and then presented a BBQ Buffet of Grilled Rib-Eye Steaks with Carmelized Cipppolini Onions. Swordfish Shrimp Kebabs and Grilled Balsamic Chicken. We also served Chunky Sweet Corn & Tomato Salad, Grilled Asparagus with Shaved Parmesan Cheese and a Greek Potato Salad. Dessert of course was a fabulous Cake with platters of Tropical Fruit and pitchers of Iced Coffee. It was great!!

Slow-Cooked Baby Onions with Balsamic
I visited the Union Square Market last friday and found the most incredible arrray of the onion family. Picked up several pounds for our friday night dinner at our Yacht Club where we exclusively cater. I served them along Grilled Bronzini. It was perfect on a picture perfect night.
Recipe:
2# Fresh Baby Onions.
Pre - blanch for 30 sec in salted boiling water. Drain and cool. Peel the onions.
Heat 1/4 cup extra virgin olive oil in large non-stick pan on medium heat. Add the onions and brown the onions, constantly stirring with a wooden spoon. Cook for approx 10 minutes. Add 3/4 cup orange juice and 3/4 cup balsamic Vinegar. Bring to a slow boil. Stir constantly, scraping the bottom of the pan. Onions will be tender. Remove onions with slotted spoon. Return pan to heat. Reduce liquid to a syrupy consistency. Pour over onions. Super with BBQ Meats. Pork Kebabs. Grilled Fish.

Last night we handled a surprise 40th Birthday party. Under a marquee, 80 guests showed up for appetizers and dinner. They were greeted with an icy summer Southsiders. Passed hors d'Oeurves of Mini Crab Cakes, shots of Spicy Cucumber soup and Goat Cheese stuffed Californian Figs. Dinner followed of Roasted Salmon with Union Square Vegetables. A simple dessert of Vanilla Bean Ice Cream with Blackberry Sauce followed. Flowers and music were all arranged by Scarborough Fair Catering. All in all, another very happy customer.
